Bamboo Sushi Portland – Sustainable Sushi

While we were visiting Portland, we gave Bamboo Sushi a try. They are a Portland-founded restaurant brand offering certified sustainable sushi.

At the heart of Bamboo Sushi’s ethos is a commitment to sourcing seafood ethically and responsibly. They prioritize partnerships with fishermen and suppliers who adhere to strict sustainability standards, ensuring that their seafood is harvested or farmed in a manner that minimizes environmental impact and supports healthy marine ecosystems.

On their menu are Nigiri, Sashimi, Rolled Sushi and more.

Bamboo Crispy Rice Spicy Albacore with serrano, cilantro, spicy aioli, togarashi ($16)

Tuna Zuke with soy marinated bigeye tuna, sesame onion ponzu, fried garlic, chive ($23)

Green Machine Roll: Tempura fried green bean and green onion, topped with MSC-certified albacore, avocado and cilantro sweet chili aioli ($13)

I pretty much didn’t like any of the items we tried. They were heavily flavoured with sauces and seasoning which masked the flavour of the fish. The sauces they used were too overwhelming for me. The Big Eye fish wasn’t my cup of tea and had a meaty flavour. The crispy rice had a nice, texture.

Overall, it was a disappointment and I would not try Bamboo Sushi again.
