Monkfish is usually only sautéed in Turkish cuisine, but at AQUA, monkfish is prepared in three different ways – grilled, poached and roasted in garlic stems – and served with seafood sweetbreads and grilled pickled okra, in a dish simply called Monkfish and Sweetbreads.
